This recipe is the perfect winter ‘overnight oats’ for a quick grab-and-go breakfast paired with a Greek yogurt cup or eggs!
This recipe can easily be adjusted to be gluten free or lactose free friendly. It is sweetened with applesauce, and of course adding a little syrup at the end is optional.
There are also a million versions of baked oatmeal out there to try, with flavours like: pumpkin, pecans, mixed berries, banana, chai, or chocolate chips.
Ingredients: (Makes 6 servings)
* 2 cups rolled oats * 1 tsp cinnamon * 1 tsp baking powder * 1/2 tsp sea salt * 2 cups milk (I used soy milk because I like the taste!) * 1/2 cup applesauce (sweetened or unsweetened) * 1 Tbsp ground flaxseed * 1 Tbsp extra virgin olive oil * 1 tsp vanilla extract * 1 cup apples, diced
Directions:
- Preheat the oven to 375°F. Spray an 8×13″ baking dish with non-stick spray.
- In a large mixing bowl, add oats, cinnamon, baking powder, ground flaxseed, salt, milk, applesauce, oil, and vanilla. Mix together.
- Fold in 3/4 cup of diced apples into the mixture.
- Pour the mixture into your baking dish and add the remaining apples on top. Feel free to add any other toppings you like here, such as some chocolate chips or nuts.
- Bake for 40 minutes or until a toothpick comes out clean. Allow the baked oatmeal to cool before cutting and serving.
- Drizzle with some maple syrup or nut butter (optional). Enjoy!
